Fruit Topped Double Chocolate Pizza

My family gets mad if I don’t bring this to family gatherings! It is so yummy, and perfect for summer!

1 pkg (18 oz) refrigerated chocolate chip cookie dough

1/2 container frozen whipped topping (thawed)

1/2 pkg. Cheesecake or White Chocolate instant pudding powder

1 pt. Strawberries

1 can (11 oz) mandarin oranges

1/4 cup semi-sweet chocolate chips

1 T. butter or margarine

Preheat oven to 350. For crust, shape cookie dough into a ball in the center of a 15″ round baking stone. Using a lightly floured rolling pin, roll out dough to a 12 inch circle, about 1/4″ thick (I use the palm of my clean hands, I don’t try to roll it because it’s so sticky). Bake for 11-14 min. or until edges are set (cookie will be soft. Do not overbake). Cool 10 minutes. Carefully loosen cookie with a large bread knife, then let cool completely.

Mix together half of the container of whipped topping with half of the Cheesecake instant pudding powder. Let sit to thicken and dissolve. Slice the strawberries. Spread the whipped topping mixture on the cookie to the edges of the crust, then arrange the strawberries and oranges on the cream mixture in a circular pattern. Microwave chocolate chips and butter on high for 30 seconds, stir until smooth. Put the melted chocolate into a sandwich bag with a VERY TINY snip cut out of one of the corners and use it like a pastry bag to drizzle over the pizza with fast long strokes, going over the edge. Cut into wedges or squares and serve. Makes about 16 wedges.
