{Skinny} Strawberry Cheesecake Pudding Pops

I absolutely miss the Pudding Pops that could be bought at the store when I was little. So nummy and creamy!  And who misses Bill Cosby on those commercials?  Now I’m showing my age!

Of course we have to make them at home now and I love this version of Skinny Strawberry Cheesecake Pudding Pops that my kids and I came up with.  They didn’t care if they were good for you or not, but I did 🙂

The trick is to use 1% milk to make them “skinny”. We also added more milk than usual so they would go farther. If you want your pops more creamy (and a little added calories per pop) just add one less cup of milk.  The way I made them, they only have 100 calories each!  YAY!

I got those “perfect for children, but not so pretty” popsicle  molds at the Dollar Store.  SCORE! They have a little cavity that catches all the drips then the kids can suck the juice right out of it.  Brilliant!

{Skinny} Strawberry Cheesecake Pudding Pops:

  • One package Cheesecake flavored Jello Pudding Mix
  • 3 cups milk (I used 1% but any kind will work, some will be creamier than others)
  • Chopped up strawberries (about 5 or 6)

*Note: if you want your pudding pops creamier, only use 2 cups of milk.  This recipe is still yummy, just not as creamy as I like.

Prepare the pudding by pouring the milk into a bowl and whisking in the pudding.  Let set up for about 5 minutes while you chop the strawberries.  Add the strawberries and mix well.  Pour the pudding mixture into your popsicle molds all the way to the top.  Freeze for at least 4 hours or until frozen all the way through.  To release the pops from the molds, run them under hot water for a few seconds until they loosen and slide out.
