Easy Eggnog Cupcake Recipe with Eggnog Butter Cream Frosting

Eggnog is one of my favorite Christmas drinks.  I love the flavor and I love anything made to taste like eggnog.  These Eggnog Cupcakes with Eggnog Butter Cream frosting have the perfect flavor combination.  I am proud to say that I came up with this recipe all by myself 🙂  You can pat me on the back after you taste them.
These truly are so easy and I bet if you are a baker, you’ll have all the ingredients in your pantry.  They are made with a Vanilla Cake mix and some other key ingredients.  
Eggnog Cupcakes:
– 1 box Vanilla Cake Mix
– 2 eggs
– 1/2 cup oil
– 1 cup eggnog
– 1/2 cup sour cream
– 1 box dry cheesecake Jell-o Instant Pudding mix
– 1 teaspoon Rum Extract
– 1/4 teaspoon nutmeg
1. Preheat oven to 350 degrees (if you are using a dark pan, 325) Add the cake mix, pudding mix and nutmeg and mix until blended
2. Add the eggnog, eggs, rum extract and oil and mix well.
3. Add the sour cream and beat for about 2 minutes.
The mix will be thick and creamy like this:
4.  Full cupcake pan lined with cupcake liners 3/4 full.
5.  Bake for 15-17 minutes or until a toothpick inserted into center comes out clean.
Eggnog Butter Cream Frosting:
– 2 lbs Powdered Sugar
– 2 sticks salted butter softened
– 1 teaspoon rum extract
– 1/4 teaspoon nutmeg
– 2/3 cup eggnog
1.  Whip butter in stand mixer or with hand held beaters until smooth.  Add rum extract and eggnog and mix well (it doesn’t have to incorporate completely).  This is an important step.  If you add the extract to the end of the mixing it will dissolve the sugar and make your butter cream look broken down.
2.  Slowly add the powdered sugar mixing well after each addition.  When you get to the consistency you like, stop adding sugar.  I add the whole bag.
3.  Get out a gallon size zip lock bag.  Put it tip first into a large cup like so and add the frosting to the bag like so:

4.  Remove bag and force the frosting over to one tip:

5. Snip off about 1/4 inch from the tip and use like a piping bag on your cupcakes:

Starting on the outside and slowly going around in a spiral until you reach the middle then lift straight up.
