Rice Cooker Spanish Chili & Lime Rice

This Spanish Chili and Lime Rice is super simple and flavorful. It is a great substitute or replacement for the traditional tomato based Mexican Rice used in Mexican dishes. It is also made in the rice cooker so it saves you time. Mom’s always could use more time!
Spanish Chili and Lime Rice

We use this rice as a side dish when we make Mexican dishes. We also love using it with our Cafe Rio Homemade CrockPot Chicken and use it in salads with our Spicy Cilantro Dressing. You’ll love the flavor even if you don’t like cilantro.

Spanish Chili Lime Rice:
2 3/4 c water
4 t chicken bouillon
4 t garlic –minced
½ bunch cilantro
1 can green chiles—or equivalent fresh
¾ t salt
1 T butter
½ onion
1/4 cup lime juice
3 c rice 
Blend cilantro, green chilies, butter, bullion, garlic, salt and onion together in food processor.  Add your rice, lime juice and water to the rice cooker pan. I don’t measure the water, I add water until the water reaches the first knuckle of my index finger as I touch the TOP of the rice. That’s how they do it in Japan 🙂 Add the chili mixture to the rice and stir. Cook on the white rice setting. When it’s done, give it a good stir. Serve with your favorite Mexican Dishes.

    Spanish chili with lime rice? Sounds very interesting, but I gonna try it for sure, because it looks so delicious here!

    Can you make this on the stove top? I think I would use chicken bone broth and water instead of bouillon and extra virgin olive oil instead of butter (I am dairy free) and use a diced Anaheim chili pepper or jalapeno – healthier than canned. Otherwise, it looks like like a great recipe!! Thanks!

      Yes! It would work on the stovetop.
