Angel Hair Alfredo with Asparagus

This easy dinner recipe is creamy and rich and healthy with the added asparagus.

Angel Hair Alfredo with Asparagus

 

Angel Hair Alfredo with Asparagus- Serves 4

  • 1/2 package angel hair pasta (also works with a whole package if you are cooking for 8)
  • one bunch asparagus cut up into thirds with the woody ends cut off
  • 4 oz. cream cheese
  • 1 1/2 cups heavy cream
  • 1/2 cup milk
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon chopped garlic
  • 1/4 teaspoon pepper

Fill a large pot 3/4 full with water and bring to a boil over high heat. Once boiling, add the angel hair and asparagus. Let boil for about 5 minutes or until al dente.  Then drain and stir in the Alfredo sauce and serve.

To make the Alfredo sauce: While the angel hair is boiling, add the cream, cream cheese, milk, garlic, & pepper. Cook over medium low heat and melt the cream cheese. When it’s smooth, whisk in the Parmesan cheese until smooth. Keep cooking until it thickens.
