Lemon Poke Cake with Orange Glaze

I’m the youngest of 8 kids. By the time I was a little older, my mom had pretty much done away with home cooked meals and homemade cakes. I think she was a little sick of doing it every day. I know how she feels now that I have 5 kids. I do however plan to continue cooking and baking for my family. One of the few things she did continue to make for us was her lemon cake with lemon glaze. It’s a childhood favorite and very simple to make. Today I wanted to put a spin on it and use Orange Juice instead of Lemon Juice for the glaze.

Lemon Cake and Orange Glaze

It turned out so good! My kids were sitting at the table shoving their mouths full and saying “This is so good mom!”. It’s not a “from scratch” cake, but I have a few tricks to make that box cake mix way better.

Lemon Poke Cake with Orange Glaze

  • 1 box lemon cake mix
  • 2 eggs
  • 1/3 cup melted butter
  • 1 1/4 cup water
  • 1/2 cup sour cream

Preheat oven to 325 degrees. Mix all the ingredients together until just incorporated and there are no lumps. Pour the cake into a prepared cake pan and bake for 25-35 minutes. The cake will be done when a toothpick inserted into the center of the cake comes out clean.

Let the cake cool completely then poke holes all over the cake with a fork.

Lemon Cake with Orange Glaze

Orange Glaze

  • 1 cup 100% Florida orange juice
  • 2 cups powdered sugar

Whisk together then pour evenly over the top of the cake.

Lemon Cake with Orange Glaze

Now you can let it sit and soak in the orange juice. You can also top it with more powdered sugar for a dusted effect.

Serve and enjoy!
