German Pancakes with Strawberry Syrup

I first had German Pancakes at my Aunts house and I fell in love with them. I make them regularly for my family and they are one of their favorite breakfasts. I make them when I don’t have time to stand around flipping pancakes.

German Pancakes with Strawberry Syrup

  • 12 eggs
  • 1 cup flour
  • 1 cup milk
  • 3 tablespoons melted butter, separated
  • 1/2 teaspoon salt
  • 4-5 cups frozen strawberries
  • 1/2 cup sugar

Preheat the oven to 400 degrees. In a blender whiz the eggs, flour, milk, 1 tablespoon butter, and salt together until smooth. Use the rest of the melted butter to coat a 9×13″ pan. Pour the batter into the pan.

Bake at 400 degrees for 15 minutes then turn the oven down to 350 degrees and bake for 13 more minutes. The pancake will puff up really tall so make sure you have it on the middle rack with no rack above it.

Make the Strawberry Syrup by microwaving the strawberries for 3 minutes.

Add the sugar and mash with a potato masher or whiz it up in the blender if you want it really smooth. Microwave in 2 minute increments until the strawberry syrup is hot.

Let the pancake rest for about 10 minutes once removed from the oven, then slice and serve with Strawberry Syrup and powdered sugar.
