Red Italian Stew Recipe

I love stews. Especially in the winter time and this Red Italian Stew Recipe really hits the spot. Stews are easy to make and they make your house smell like a home. We bought some potatoes from my nephew for a football fundraiser so we have been trying really hard to use them all! This stew helped us out. It’s full of delicious potatoes, tomatoes, sausage, and Italian Seasoning. And it can be made in the crock pot so there’s an added bonus.

We made our stew with Italian Turkey Sausage and chicken which I thought was delicious in this stew. The Turkey Sausage is a lighter meat and works perfectly in a broth. No need for a heavy full fat pork sausage, but that would be very delicious too!

My kids loved this stew just as much as the hubby and I did. We buttered some bread to go along with it, and we were done. So easy.

Red Italian Stew

  • 3 chicken breasts
  • 3-4 Italian Sausage Links
  • 3-4 red or golden potatoes
  • 1 teaspoon chopped garlic
  • 1/2 onion diced
  • 3- 14.5 oz. cans petite diced tomatoes
  • 2 cups chicken broth or 2 cups water and 2 teaspoons chicken bullion
  • 2 tablespoons Italian Seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper

Peel and dice the potatoes. Add to the crock pot or stock pot: chicken, potatoes, tomatoes, garlic, onion, Italian Seasoning, salt, pepper, and chicken broth. In a saute pan, fry the sausages over medium high heat and brown on all sides. Slice the sausage on an angle and add to the crock pot. Add more broth if the stew seems too thick, but remember as the chicken cooks it will create more broth. If you are cooking this in a crock pot cook on low for 8 hours or on high for 4 hours. If you are cooking on the stove top, cook over medium high heat until boiling. Then reduce heat to low and simmer, covered, for 30-45 minutes. Shred chicken and cook for an additional 10 min. Serve warm.

You can serve with Parmesan Cheese to make it extra yummy!
