I love to use my slow cooker in the summer so that the oven doesn’t heat up my house. But I don’t necessarily want a heavy dinner every night in the summer, so that’s why I love to make these Pork Tacos in the slow cooker. Honestly, nothing could be easier! Your whole family will love these!
Pork Tacos
- 1 Pork Shoulder Roast (Mine was about 4 pounds)
- 1 tablespoon Kosher Salt
- 1/2 cup water
- 4-5 teaspoons taco seasoning, to taste (you can try my homemade taco seasoning)
- 1 package white corn tortillas
- red cabbage, thinly sliced
- one package Queso Fresco cheese crumbled
- 1/4 bunch cilantro roughly chopped
Add the pork roast to the slow cooker and pour the water in. Rub the Kosher Salt and taco seasoning evenly over the top of the pork and cook on low for 6-8 hours or on high for 4-5 hours. Using two forks shred the pork and add more salt and taco seasoning to taste. Mix well. Heat your corn tortillas according to package directions. Assemble the tacos with the meat first, then cilantro, red cabbage, then the crumbled Queso Fresco. Enjoy!
