Chicken & Lime Soup Recipe

Chicken & Lime Soup.  So fresh and healthy.  Perfect blend of flavors.  My 8 year old son asked if we could have it for every dinner!  Success!  From Tips From a Typical Mom.

This Chicken and Lime soup is so easy and the ingredients are so fresh!  So good for you too!  It includes all of my favorite ingredients.  And more importantly my 8 year old son said, “Mom, can we please have this for dinner every night?”  Success!

These are the toppings, aren’t they beautiful?

Chicken and Lime Soup:
-2 tablespoons olive oil
-1/2 large yellow onion, chopped
-2 celery stalks, sliced
-1 teaspoon chopped garlic
-1 jalapeno, seeded and chopped
-2 chicken breasts
-1 large can tomatoes (or two small cans)
-1 small can green chilies
-6 cups water
-6 chicken bullion cubes
-1 tablespoon cumin
-1 teaspoon salt
-1 teaspoon Italian seasoning
-1/4 bunch cilantro chopped
-2 limes
-1-2 avocado for garnish (optional)

Add the olive oil to a pot large enough to hold the soup.  Heat over high heat and add the chopped onion, chopped garlic, sliced celery, & the seeded and chopped jalapeno.  Cook until the onion is translucent, stirring frequently.

Add the canned tomatoes, chicken, green chilies, water, bullion, cumin, salt and italian seasoning and stir until well combined.

Bring to a boil.  Reduce heat to low and cover.  Simmer for an hour, stirring about every 15 minutes.

Remove the chicken breasts and shred with two forks into bite sized pieces.  Add the cilantro and juice the limes into the soup using a spoon to get all the juice out.

Serve with chopped avocado and lime slices if desired.  Enjoy!

We ate ours with this really easy “No Time” Artisan Bread.  It only took an hour total, so I made it while the soup was simmering. (link coming soon)

Here is the soup after the chicken was shredded and cilantro and lime juice were added.
