Crepes Suzette~ Crepes with Orange Sauce and No Alcohol

Do you like Crepes? Have you ever made Crepes at home? Why not!? The name, Crepes Suzette, makes them sound hard to make, but they really are very easy if you know some of these tips and tricks. This Suzette Orange Sauce is so good too! It makes them taste fresh and Summery. You’ll love these, and when you learn how easy they are to make, you’ll make them all the time!

How to make Crepes Suzette with no Alcohol:

Ingredients:  

Crepes: Makes 12

1 1/2 cups milk
2/3 cup all purpose flour
1/2 teaspoon salt
3 eggs

Suzette Sauce (Orange Sauce):

1/3 cup orange juice
1/4 cup butter
2 Tablespoons sugar
1/4 teaspoon grated orange peel

How to make the Crepes:

In a blender, combine all of the ingredients for the crepes only (not the sauce ingredients) and pulse for 10 seconds. Optional: Place the crepe batter in the refrigerator for 1 hour. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours.

Heat a small 7″ frying pan and one 10″ frying pan over medium heat for about 5 minutes. Add butter to coat the 6″ pan. Pour 1/4 cup of batter into the center of the pan and swirl to spread evenly.

 Add butter to the 10 ” pan. Cook for 2 minutes in the 7″ pan until top is set, loosen crepe and flip over into the 10″ pan.

 Cook for another 30 seconds and remove to a plate.

When cool enough to handle, fold the crepes in half, then in half again so they look like a triangle. Continue until all batter is gone. Serve immediately with the Suzette Sauce.

To make the Suzette Orange Sauce:

Add all ingredients into a 10″ skillet over med-low eat until butter melts and sauce thickens. About 5 minutes. Serve over Crepes. Alternately, you can soak the crepes in the sauce for about 30 seconds each then serve.

To make this dish a dessert, add a scoop of vanilla ice cream and drizzle more sauce over the top of the ice cream.
