Garden Vegetable Creamy Bow Tie Pasta

08/22/14 | Dinner, Main Dishes, Recipes

Do you have a garden overflowing with veggies? Well, this recipe is perfect for you. I was not born with a green thumb, so it’s a good thing that my mother in law was. We can go and “raid” her garden any time, and this is our favorite recipe to make when we have an over abundance of veggies to use up. Garden Vegetable Creamy Bow Tie Pasta Here’s what you’ll need:

  • 16 oz Bow Tie Pasta. Our favorite is Da Vinci Farfalle Bowties, 16 Oz
  • 24 oz of your favorite pasta sauce. Ours is Prego Traditional Pasta Sauce, 67 Oz
  • 1 cup Heavy Cream
  • 1/2 Grated Parmesan Cheese
  • 2 T. Fresh Chopped Basil
  • 2 Fresh Tomatoes, chopped
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper, chopped
  • 1 Small Zucchini, chopped
  • And any other garden veggies you want to use, chopped

Add the pasta sauce, cream, cheese, and all vegetables to a large sauce pan. Cook over medium-high heat until boiling. Garden Vegetable Creamy Bow Tie Pasta While sauce is simmering, cook the pasta according to package directions. Drain pasta and add back to the pan. Pour the desired amount of vegetable sauce over pasta and stir. Serve hot with more Parmesan cheese on top. Enjoy! Garden Vegetable Creamy Bow Tie Pasta Annette
