Real Homemade French Fries

French fries are my favorite food. I’d rather eat french fries than any treat any day. Sometimes I want french fries over chocolate. I know, blasphemy. I’m just a salt lover.

I thought it would be fun to make “real” french fries at home. When I say “real” I mean fried. I know, I know, not so healthy, but I do make baked french fries a lot and I think it’s OK to cheat on a diet sometimes, right?

There is a secret to making fresh fried potatoes. If you don’t follow the directions, you might not cook the potatoes all the way through without burning them.

The fun thing about frying your own potatoes is that you can flavor them how ever you choose after they come out of the fryer.

Roughly peel your potatoes. Leaving a few peelings make the potatoes more rustic. Slice the potatoes the long way about 4 or 5 times.

Then lay those pieces flat and cut about 4 or 5 more times lengthwise.

Soak potatoes in a large bowl of water for about 30 minutes. Drain the potatoes and pat dry thoroughly with paper towels.

Heat oil in a deep-fryer or large saucepan to 275 degrees F (135 degrees C). Gently add the potatoes in the hot oil for about 5 minutes, stirring and flipping the potatoes occasionally.

Remove potatoes from oil with a slotted spoon to drain on paper towel and to cool completely.

Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Fry the potatoes again until golden brown, 5 to 6 minutes. Blot with a paper towel. Sprinkle with salt to serve.
