Cadbury Mini Eggs Cookies for Easter

I decided I would make something with these Cadbury Mini Eggs for the blog, before I ate the whole bag, so I made these deliciously sweet Cadbury Mini Eggs Cookies. Mmmmm! Yummy! And their cute too!

I am always in trouble when Cadbury Mini Eggs come to the stores in February because I always buy them, and eat them. Then buy more for Easter and eat them before Easter is here. Then I buy more, then eat them from my kids Easter baskets. They are seriously so good!

Cadbury Mini Eggs Cookies

  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup softened butter
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 eggs

In a bowl combine the flour, salt, and baking soda. Set aside. In a stand mixer or with a hand mixer and a large bowl, cream the butter on high until light colored and fluffy. Add the brown sugar and granulated sugar and cream together until well blended. Add the vanilla and mix well. Add the eggs one at a time until well blended. Slowly add the flour mixture in segments mixing well between each addition.

Scoop the cookies by the 2 tablespoon size about an inch and a half apart on a baking sheet and bake at 375 degrees for 7-10 minutes or until the middle is set and the edges are a golden brown. Immediately after you pull the cookies out of the oven, press the desired amount of Cadbury Eggs into the hot cookie. I chose to do 3 different colors on each cookie. Let cool for about 3 minutes on baking sheet then remove to a cooling rack to continue to cool. Store in an airtight container for up to 2 weeks.
