Cucumber Salad

My family really loves cucumbers. So much so that I tried to plant them in the garden to save a few bucks. But, my dog ate the plant. So I still buy my cucumbers at the store.

I love trying new recipes with cucumbers. One of my favorites is Tzatziki Sauce that I use over Chicken Gyros. It’s delish! But I also like this Asian inspired cucumber salad. It’s sweet and sour and so refreshing!

Cucumber Salad

Instead of slicing the cucumber, we peeled it, seeded it and then cut it into very thin pieces using our peeler. I think this made it more fun for the kids to eat. Almost like a fettuccine noodle. It’s easy to throw together and fresh and healthy for your family. You can serve this as a side dish to just about anything you make for dinner.

Cucumber Salad

  • 2 medium cucumbers
  • 1/4 cup rice vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 tablespoons sesame seeds, toasted
  1. Peel the cucumbers leaving alternating green stripes. We want some dark green, not all of it though. Slice the cucumbers in half the long way and scrape the seeds out with a spoon. Using a sharp knife (or our favorite peeler), cut into very thin slices. Lay the cucumber out on a paper towel and pat with another paper towel to remove excess moisture.
  2. Combine vinegar, sugar and salt in a medium bowl, stir until the sugar is dissolved. Add the cucumbers and sesame seeds; toss well to combine. Serve immediately.
