It all started with a cozy movie night at home. We were watching K-pop Demon Hunters on Netflix—because, let’s be honest, anything with K-pop, a little fantasy, and awesome girl power is an automatic yes in our house. About halfway through the movie, the characters were snacking on something that looked so good, we had to hit pause and look it up.

That delicious-looking snack? Kimbap. And let me tell you, it was love at first bite. The next weekend, we were all rolling our own kimbap in the kitchen, pretending we were part of the movie (complete with K-pop dance breaks, of course). Now it’s a regular part of our meal-prep routine—and honestly, I can’t believe we lived so long without it!

So, what exactly is kimbap? And why is it popping up everywhere lately, from K-pop videos to anime episodes? Let’s roll into it (pun totally intended). Spoiler alert: it beats sushi any day—especially if you’re not into fish like me.

What is Kimbap (Gimbap)?

    • Kimbap is everyday comfort food.

Honestly, as someone who doesn’t like the taste of fish, I’ll take a spicy tuna kimbap (with canned tuna, not raw!) over sushi any day.

Why Kimbap is Gaining Popularity (Thanks, K-pop and Anime!)

We’re living in the golden age of Korean pop culture. K-pop, K-dramas, and anime are totally ruling the entertainment world right now. Shows like K-pop Demon Hunter and Extraordinary Attorney Woo are shining a spotlight on Korean food culture too.

It’s not uncommon to see your favorite idols munching on kimbap in a behind-the-scenes video or a character in a K-drama offering it to a friend as a sweet gesture. These little food moments make people curious. Next thing you know, kimbap recipes are going viral on TikTok and popping up on restaurant menus across the globe.

Even though kimbap is Korean, it’s been featured in anime as a nod to cross-cultural love. Fans are now connecting the dots between their favorite shows and the food the characters eat—and they want to try it all!

How to Make Kimbap at Home: A Step-by-Step Guide

You don’t have to be a professional chef to make kimbap. If you can roll a burrito, you can make kimbap. Here’s a simple way to get started.

Ingredients:

  • 2 cups cooked white rice
  • 1 tsp sesame oil + extra for brushing
  • 1/2 tsp salt
  • 3-4 sheets of roasted seaweed (gim or nori)
  • Julienned carrots (lightly sautéed)
  • Spinach (blanched and seasoned with sesame oil)
  • Pickled radish strips (danmuji)
  • Cooked egg (cooked like an omlette then sliced into strips)
  • Cooked beef, tuna, or spam (optional)
  • Bamboo sushi mat for rolling

Instructions:

  1. Mix the rice with sesame oil and salt while it’s still warm.
  2. Lay a sheet of gim shiny-side down on the bamboo mat.
  3. Spread a thin layer of rice over the seaweed, leaving 1 inch at the top.
  4. Layer your fillings horizontally across the middle.
  5. Roll tightly using the mat, pressing firmly.
  6. Brush with a little sesame oil and slice into 1/2-inch rounds.
