This Chicken and Lime soup is so easy and the ingredients are so fresh! Â So good for you too! Â It includes all of my favorite ingredients. Â And more importantly my 8 year old son said, “Mom, can we please have this for dinner every night?” Â Success!
Chicken and Lime Soup:
-2 tablespoons olive oil
-1/2 large yellow onion, chopped
-2 celery stalks, sliced
-1 teaspoon chopped garlic
-1 jalapeno, seeded and chopped
-2 chicken breasts
-1 large can tomatoes (or two small cans)
-1 small can green chilies
-6 cups water
-6 chicken bullion cubes
-1 tablespoon cumin
-1 teaspoon salt
-1 teaspoon Italian seasoning
-1/4 bunch cilantro chopped
-2 limes
-1-2 avocado for garnish (optional)
Add the olive oil to a pot large enough to hold the soup. Â Heat over high heat and add the chopped onion, chopped garlic, sliced celery, & the seeded and chopped jalapeno. Â Cook until the onion is translucent, stirring frequently.
Add the canned tomatoes, chicken, green chilies, water, bullion, cumin, salt and italian seasoning and stir until well combined.
Bring to a boil. Â Reduce heat to low and cover. Â Simmer for an hour, stirring about every 15 minutes.
Remove the chicken breasts and shred with two forks into bite sized pieces. Â Add the cilantro and juice the limes into the soup using a spoon to get all the juice out.
Serve with chopped avocado and lime slices if desired. Â Enjoy!
