Easy Rice Cooker Mexican Rice

I love things that are easy… cue the rice cooker, one of my best friends besides the crock pot! If you don’t have a rice cooker, get one, you won’t regret it. This recipe is yummy, easy and fast. What could be better?

Easy Rice Cooker Mexican Rice

3 cups rice
3 cups water (or use my trick… stick your finger on the top of the rice and fill it with water until the water hits the line of the first knuckle on your finger, so about 1 inch above the rice.)
1 packet Taco Seasoning
1 Can Rotel Tomatoes with Green Chilies, or 1 can Tomatoes with one can green chilies
2 Tbs. butter cut up and placed around the rice
1/4 bunch cilantro chopped finely
1/4 white onion chopped
1 tsp. garlic chopped

(To make it even easier, you don’t need to use the cilantro, onion or garlic)

Close the lid and hit cook.  The rice cooker will beep when it’s done.  Easy Peasy!
