Best Burrito Ever!

This recipe is a simple, but yummy and fresh replacement recipe for your boring “busy night burritos”.  It’s all in the fresh ingredients, so don’t skip a step!

Best Burrito Ever!

1 lb. ground beef
2 cans refried beans
1 package of your favorite Taco Seasoning
1/4 of an onion, diced
about 10 or 11 uncooked tortillas (VERY important)

Toppings:
one large or two small fresh tomatoes
sliced olives
1/4 bunch chopped cilantro (if you like it… we LOVE it!)
shredded mexican blend cheese
sour cream

Brown and crumble the ground beef in a skillet with the onion.  Drain.  Add the Taco Seasoning and refried beans.  Stir well and heat through.

While cooking the beef, cook the tortillas according to package directions.

Assemble:
Start with the sour cream on the tortilla (this is a very important step, it keeps the sour cream spoon from becoming contaminated with other food 🙂  That really bugs me!
Then about two HEAPING tablespoons of the bean and meat mixture.  Sprinkle with cheese, tomatoes, olives then cilantro.

Fold up one end of tortilla (to create the bottom of the burrito) then fold over one side and roll.
