Easy Hands Free Risotto with Bellini

I love to make Risotto but it’s usually very time consuming and and you have to stand there and mix it and slowly add broth as it cooks. It’s not a practical dish for busy moms. UNTIL NOW!

Easy Hands Free Risotto with Bellini

Let’s get on with the delicious and super easy recipe. I guarantee once you have made this dish, you will make it at least once a month for your family. Be sure to scroll down so you can see all the amazing dishes and treats you can make in the Bellini Kitchen Master.

Easy Hands Free Risotto with Bellini

  • 4 large shallots or 5 oz. of yellow onion (one small onion)
  • 2 tablespoons olive oil
  • 3 3/4 cups chicken or vegetable broth
  • 1 1/2 cups Arborio rice (risotto rice)
  • 2 tablespoons butter
  • 1/2 Parmesan cheese
  1. Fit the chopping blade into the work bowl. Add the shallots or onion (cut into quarters) into the work bowl and lock lid in place. Pulse 2 or 3 times or until finely chopped. Remove lid and scrape down the sides of the bowl. Replace the chopping blade with the stirring blade and place work bowl back in place.
  2. Add the olive oil, lock lid in place and remove the measuring cup from the lid. Saute the onion at 90° C on speed 2 for 5-8 minutes.
  3. Add the broth and rice and cook at 100° C on speed 2 for 18 minutes for al dente or 20 minutes for a softer bite.
  4. Add the butter and cheese and stir for 20-30 seconds. Remove lid and finish stirring. Spoon into serving bowls. Enjoy!

Variations:

Asparagus Risotto: Add 3/4 cup pencil asparagus cut into 1-inch lengths during the last 3 minutes of cooking.

Shrimp and Saffron Risotto: Add 1/2 teaspoon saffron threads along with the broth. Add 1/2 pound medium shrimp, peeled, deveined and cut into 1-inch lengths during the last 3 minutes of cooking.

Can you believe it? I am so excited to try out more things in my Bellini. Next I’ll be making a meat sauce, because I can add all the ingredients, including the ground beef, right to the bowl and the Bellini does all the work for me. It’s a busy mom’s dream come true. I dare say, it’s even better than the instant pot and crock pot.

Ingredients
